Soumen are traditional Japanese noodles that are cooked in boiling water and then rinsed in cold water to be eaten fresh. They can either be presented on a plate separately from their broth (tsuyu), then dipped in it, or directly in the tsuyu. They are sometimes eaten hot.

The Itsuki Foods brand specialises in the production of noodles.

ITSUKI FOODS - Soumen 160g

Ingredients : wheat flour, wheat protein, salt/processed starch, thickener (alginate)

Preparation:

  • Cold noodles: cook the noodles in 2L of boiling water between 2 minutes 30 seconds and 3 minutes 30 seconds, then switch to cold water, so that the noodles are at room temperature (or even cold)
  • Hot noodles: cook the noodles in 2L of boiling water between 2 and 3 minutes
