"Taiwan Mazesoba", which has become very popular not only in Nagoya but also in the Tokyo metropolitan area, has been reproduced with cup noodles.
The sauce, which is key to the taste, is a base of soy sauce with the umami of meat miso and the spiciness of chili bean sauce, and finished with egg yolk for a sweet finish.
The noodles are fried noodles with springy elasticity, and the thick noodles are often intertwined with the spicy sauce.
The attached furikake (nori, fish powder and garlic) sets the perfect accent making it an addictive dish.
