Hiyamugi noodles are made like soumens and are very similar to soumens, but are slightly thicker. They are considered a summer dish and are usually eaten cold.

The Kawada Seimen brand specialises in the production of quality udon noodles.

Ingredients: wheat flour, salt

Preparation: cook the noodles in boiling water for 4 minutes, then rinse in cold water and drain before eating
