Japanese "ume" plums are the fruit of a tree related to both apricot and plum. Closer to apricots than plums, they can only be eaten after being macerated or cooked, not raw. The macerated plums are called "umeboshi" and are particularly popular with the Japanese for their salty and very sour taste.

Shiso is an aromatic herb with serrated leaves that is widely used in Japan. It can be found in various dishes, such as sashimi, sushi, tempura, etc.

This condiment is recommended for onigiri, makizushi, ochazuke and even pasta.
